Luscious Lemon Bars: Zesty and Sweet

Ingredients

  • 2 cups of all-purpose flour
  • 1 cup of unsalted butter, softened
  • 1/2 cup of powdered sugar
  • 4 large eggs
  • 1 1/2 cups of granulated sugar
  • 1/4 cup of fresh lemon juice
  • Zest of two lemons
  • 1/2 teaspoon of baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the flour, softened butter, and powdered sugar to create a crumbly crust.
  3. Press the crust mixture evenly into the prepared baking dish and bake for 15-20 minutes until lightly golden.
  4. While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
  5. Pour the lemon mixture over the baked crust and return to the oven for an additional 25-30 minutes until set.
  6. Allow the lemon bars to cool completely before dusting with powdered sugar and cutting into squares.
