Ingredients

  • 4 medium-sized zucchini
  • 1 cup of breadcrumbs
  • 1/2 cup of grated Parmesan cheese
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 eggs
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Trim the ends off the zucchini and cut them into thin strips resembling fries.
  3. In a bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini strip into the beaten eggs, allowing any excess to drip off.
  6. Coat the zucchini strip with the breadcrumb mixture, pressing the crumbs onto the strips to adhere.
  7. Place the coated zucchini strips on the prepared baking sheet.

  9. Bake for 20-25 minutes or until the zucchini fries are golden and crispy.
