Sumptuous Mushroom Risotto
Ingredients
- 2 cups Arborio rice
- 8 oz. fresh mushrooms, sliced
- 1 onion, finely chopped
- 4 cups vegetable broth, hot
- 1 cup dry white wine
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil and butter over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add sliced mushrooms and cook until they release their moisture and turn golden brown.
- Stir in Arborio rice and cook for 2-3 minutes until the rice is lightly toasted.
- Pour in the white wine and cook, stirring constantly, until it’s mostly absorbed.
- Gradually add hot vegetable broth, one ladle at a time, stirring frequently and allowing each addition to be absorbed before adding more.
- Cook until the risotto is creamy and the rice is tender (about 18-20 minutes).
- Remove from heat, stir in grated Parmesan cheese, and season with salt and pepper.
- Serve hot, garnished with extra Parmesan cheese and fresh parsley if desired.
