Ingredients

  • 2 cups Arborio rice
  • 8 oz. fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 4 cups vegetable broth, hot
  • 1 cup dry white wine
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add sliced mushrooms and cook until they release their moisture and turn golden brown.
  3. Stir in Arborio rice and cook for 2-3 minutes until the rice is lightly toasted.
  4. Pour in the white wine and cook, stirring constantly, until it’s mostly absorbed.
  5. Gradually add hot vegetable broth, one ladle at a time, stirring frequently and allowing each addition to be absorbed before adding more.
  6. Cook until the risotto is creamy and the rice is tender (about 18-20 minutes).
  7. Remove from heat, stir in grated Parmesan cheese, and season with salt and pepper.
  8. Serve hot, garnished with extra Parmesan cheese and fresh parsley if desired.
