Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • Sour cream and salsa for serving

Instructions

  1. In a bowl, combine the cilantro, lime juice, garlic, cumin, chili powder, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or overnight for best results.
  3. Preheat your grill to medium-high heat and oil the grates to prevent sticking.
  4. Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  6. Warm the tortillas on the grill for about 30 seconds per side.
  7. Assemble your tacos by placing slices of grilled chicken on each tortilla and topping with lettuce, tomatoes, red onion, and cheddar cheese.
  8. Serve with sour cream and salsa on the side.
