One-Pot Wonder: Chili Night

Ingredients

  • 2 lbs ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 can (14 oz) corn, drained
  • 1 packet chili seasoning mix
  • Salt and pepper to taste
  • Shredded cheese, sour cream, and chopped green onions for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onions and minced garlic to the pot. Sauté for 2-3 minutes until the onions are translucent.
  3. Stir in diced tomatoes, kidney beans, black beans, and corn. Mix well.
  4. Sprinkle the chili seasoning mix over the ingredients and stir to combine. Season with salt and pepper to taste.
  5. Reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally.
  6. Serve hot, garnished with shredded cheese, sour cream, and chopped green onions.
